Buddha Bowl
I don't know if there are any "rules" behind creating a Buddha Bowl, but this is my version and it's delicious! Make a portion for one or enough for a feast, the quantity is up to you.

Ingredients
- Cooked Quinoa
- Roasted Sweet Potatoes
- Roasted Beets
- Roasted Broccoli
- Roasted Fennel
- Avocado
- Sauerkraut
- Salt and seasonings (optional)
Instructions
- Cook quinoa
- Roast veggies with a little coconut oil
- Dish up desired amount and top with avocado and sauerkraut
