This is currently my lunch of choice. When I create a new salad recipe I tend to eat it for weeks on end until I come up with something new. So this is my latest. It's rich in protein and healthy fats. And is perfect if you are looking for a low carb, sugar free meal.

- Arugula
- Wild Planets canned Sockeye Salmon
- Artichokes
- Daikon Radish
- Avocado
- Walnuts
- Top with this simple lemon mustard salad dressing
Instructions
- Chop and toss all ingredients together.
