Spiced Pumpkin Soup
It's October which means it's time for Pumpkin recipes! Since I gave my pumpkin spice latte this year I have to find other ways to satisfy that pumpkin craving and this soup hits the spot. This of this as pumpkin soup with a kick!

Ingredients
- 1 Yellow onion chopped
- 4 cloves of garlic chopped
- 2 tbsp of Red Curry Paste
- 2 tbsp of Coconut Oil
- 1 can of Organic Pureed Pumpkin (BPA Free)
- 2 Cups of Coconut Milk
- 2 Cups of organic Veggie Stock ( I used Tom Yum Thai base for extra flavor)
- 1 tsp of Pumpkin Pie Spice mix
Instructions
- In a large pot add coconut oil, onion, garlic, and red curry paste and sauté for 4-5 minutes.
- Add Pumpkin, Coconut Milk, Veggie Stock, and Spice Mix and simmer for 15-20 minutes.
- Add soup to blender or use an immersion blender and process until smooth.
